Egg Nog Waffle Sticks with Egg Nog Dipping Sauce

Use egg nog instead of milk when making waffle sticks and dip those sticks into a delicious egg nog dipping sauce made with thickened store bought egg nog.

Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp 1/2 tsp baking soda
  • 1 tsp freshly grated nutmeg
  • 1 tsp salt
  • 8 tbsp butter
  • 4 tbsp sugar
  • 2 large eggs
  • 2 cups store bought egg nog

Egg Nog Dipping Sauce

  • 1 TBS all-purpose flour
  • 2 cups store bough eggnog
  • 3 large egg yolks lightly beaten
  • freshly grated nutmeg to taste

Instructions
 

  • In a large mixing bowl combine: the flour, sugar, baking powder, baking soda, nutmeg and salt. Mix well.
  • Melt the butter in the microwave and allow a few minutes to cool.
  • Combine the eggs and 2 cups of egg nog. Add in the melted butter.
  • Make a well in the center of the dried ingredients and pour in the wet ingredients.
  • Mix it all together until it is just combined and there is no dry flour. Don't worry about it being lumpy, the lumps will cook out. You don't want to overmix the batter.
  • Allow the batter to sit out while the waffle maker heats up. The batter will thicken some as the flour hydrate.
  • Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter. I cook mine about 2-3 mintues past when the light actually goes out on the waffle maker indicating it's done. I want the waffle to be darker brown in color and crispy so it's perfect for dipping.
  • Place the finished waffles on a cooling rack so that the bottoms don't get soggy. Keep making waffles until your batter is done.
  • Cut or break apart into waffle sticks for serving.

To make the dipping sauce

  • Note, if you are going to make the dipping sauce, I would do it before you make the waffle sticks.
  • Add egg nog and flour into a pot. Add freshly grated nutmeg to taste. Mix really well to combine.
  • Bring to just a simmer and then remove from the heat. Stay close by so it doesn't boil over.
  • Allow the mixture to cool for a few minutes. Meanwhile mix up the egg yolks into a large bowl. Then slowly add the warm egg nog, so you don't scramble the eggs. Mix well to completely combine.
  • Pour everything into the pot you used to warm the egg nog.. Heat the pot up over medium heat until it's thick enough to coat the back of a spoon or is about 170 degrees when checked with a thermometer.
  • Allow to completely cool before using for dipping the waffle sticks.

Notes

For this recipe you will be using 4 cups of egg nog total, which is an entire quart of egg nog.
