Chocolate Peppermint Mini Waffles with Icing

Tis the season for chocolate and peppermint! Can’t have Christmas without them, so just had to put them in a waffle. If you have a Christmas tree waffle maker, learn how you can decorate the waffles with a peppermint icing and sprinkles!

I am going to say – chocolate and mint is the best flavorful combination on the planet. Most of my family is in total agreement with me. What I love about the Christmas season is all of the chocolate and mint treats you can find in the grocery store.

Of course we are going to make our own and that leads me to these chocolate peppermint waffles.

Before we get to the recipe itself, I want to talk about the 2 most important ingredients in this recipe – the cocoa powder and peppermint extract.

Dutch Processed Cocoa

Dutch Processed Cocoa powder has been treated to reduce the acid in the cocoa powder. This makes it less bitter. And the cocoa powder is darker in color too which makes the chocolate waffles look darker and more chocolaty looking to me.

Peppermint Extract

My recipe calls for peppermint extract, not peppermint oil. You can’t swap them out for each other as peppermint oil is way stronger than extract.

Dash Christmas Tree Mini Waffle Maker

On my birthday this last year, I took some money that I got to do a little shopping at a Cost Plus World Market store. I picked up the blue mini sheet pan that you see in the photo at the top and I also got this Dash Christmas Tree Mini Waffle maker too. It was on sale! Unlike my gingerbread man waffle maker that is just red on the outside and looks like their standard mini waffle maker, this one has a pretty design on it. It’s one you will want to have on your countertop all Christmas season long.

This waffle maker creates two different patterns on the waffles. On one side it will look like a traditional waffle and on the other side it will look more like a pancake with a raised tree in the center.

If you have the Dash Multimaker Mini System that has plates you can change out, you can pick up a pack of 2 Christmas plates, one with a snowman and one with a tree on it. The tree one is different as it has a tree within a waffle pattern.

Decorating the Waffles

The raised Christmas tree on the waffles give you the perfect opportunity to decorate the waffle as if they were cookies. Who said cookies get to have all the fun!

What we did was spread a peppermint icing onto the trees and then put a yellow circle sprinkle on the top to look like a star on top of the tree. But you could go crazy with the sprinkles to decorate the trees. We have found packs of sprinkles that have Christmas lights in them. That would be fun on these.

The icing is pretty simple to make. You just need powdered sugar, the peppermint extract, and water. You will find the instructions in the recipe card below.

🧇 How many waffles does it make? I usually get around 16-18 mini waffles from this recipe. The waffles are around 4 inches. To give you an idea, a full sized waffle maker from Dash makes waffles that are 8 inches. So if you are making these waffles with a standard size waffle maker you may get somewhere between 8-9 waffles from this recipe.

Chocolate Peppermint Mini Waffles

Make these dark chocolate waffles that are enhanced with a little peppermint extract for the perfect flavors of Christmas!

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 – 1 tsp peppermint extract to taste
  • 1 tsp salt
  • 8 tbsp butter
  • 2 tbsp sugar
  • 2 large eggs
  • 2 cup whole milk

Optional Peppermint Icing

  • 1 cup powdered sugar,
  • 1/8 tsp peppermint extract
  • 1 tsp water

Instructions
 

  • In a large mixing bowl combine: the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix well to combine. You can do this with a fork or spoon.
  • Take the butter and melt it completely in the microwave or a pot and allow a few minutes to cool.
  • Measure out 2 cup of whole milk into a measuring cup with space so you can add 2 cracked eggs and the peppermint extract. Stir well to combine. Once the butter has cooled a bit, add it as well. If your measuring cup isn't big enough you can pour the ingredient into a bowl that is.
  • Make a well in the center of the dried ingredients and pour in the wet ingredients.
  • Mix it all together until it is just combined and there is no dry flour. You don't need to work out any lumps. It's important not to overmix the batter for tender waffles.
  • The batter can sit out while the waffle maker heats up. The batter may thicken some as the flour hydrates.
  • Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter.
  • Cook until the waffles until darkened slightly and are easy to remove from the waffle maker. Place them on single layer on a cooling rack to keep them from getting soggy.
  • You can reheat them when all done with waffle by putting them back in the waffle maker for a 1 minute to reheat or you can store them in an oven set to warm until ready to eat. Freeze leftovers when they are cooled.

How to make optional icing

  • To make an icing you can spread on the waffles, combine 1 cup of powdered sugar with water. I used 1 teaspoon of water total, but I slowly add it until I get the right texture. If it's too thick add more, too thin add more powdered sugar.
  • Adjust it until it's perfect, then add in your peppermint extract. Use immediately on the waffles.
