Let’s Stuff Some Waffles

I knew that one day, we would post a recipe featuring a stuffed waffle, and that day has finally come. With Valentine’s Day around the corner, I thought now would be the perfect time to share a strawberry cheesecake waffle recipe.
We made the cheesecake dip for a Valentine’s Day waffle board, but we also used it to make stuffed waffles. I tell you, picking up a crisp waffle and eating it like a sandwich with a creamy filling is an experience everyone should have.”

How to Make the Cheesecake Filling
Down in the recipe card, I’ll share the actual waffle recipe I used, but first, I want to talk about the cream cheese filling. It’s pretty simple to make. Here’s what you’ll need:
- 8 oz cream cheese, at room temperature
- 3 TBS sugar
- 2 tsp half & half or whole milk
- 1/4 tsp vanilla extract

Combine the cream cheese, sugar, half & half (or whole milk), and vanilla extract in a bowl. Use a hand mixer to blend everything together until smooth. Now, take a taste. Is it as sweet as you’d like? Is the texture to your liking? If it’s too thick, you can add a little more milk. You want it to be spreadable.

You could just put this dip into a bowl and use it to dip your waffles in like I did with our Valentine’s Day Waffle Board if you want.

What Waffle Maker Did I Use
For this recipe, I’m busting out the big waffle maker. We picked this one up at a thrift store, which is a great place to find waffle makers on the cheap. This West Bend model is the type where you put the batter in and then rotate it 180 degrees—like the ones you often find at hotel breakfast buffets.
To make these strawberry cheesecake waffles, I broke the circular waffles into four triangles. I prefer this shape over using mini waffles, which I often do in a lot of my recipes.
🧇 How many waffles does it make? The recipe will make at least 2 large waffles that you will turn into 4 “waffle sandwiches”.

Strawberry Cheesecake Waffles
Ingredients
For the waffle batter
- 1 cups flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tbsp sugar
- 1 cup whole milk
- 2 tbsp melted butter
- 1 tbsp cooking oil
- 1/2 tsp vanilla extract
Cheesecake filling
- 8 oz cream cheese, at room temperature
- 3 TBS sugar
- 2 tsp half & half or whole milk
- 1/4 tsp vanilla extract
- 8 oz sliced strawberries
Instructions
How to make the waffles
- In a large mixing bowl combine: the flour, sugar, baking powder, baking soda, and salt. Mix well.
- Melt the butter in the microwave and allow a few minutes to cool.
- Measure out the milk into a measuring cup with space to add the oil Mix well to combine. Once the butter has cooled a bit, add it as well.
- Make a well in the center of the dried ingredients and pour in the wet ingredients.
- Mix it all together until it is just combined and there is no dry flour. Don't worry about it being lumpy, the lumps will cook out. You don't want to overmix the batter or your waffles will be tough.
- Allow the batter to rest for 10 minutes. The batter will thicken some as the flour hydrates.
- Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter. Cook until waffle can be easily removed without sticking and it appears completely set. Repeat this until you have cooked all the waffles.
- When the waffles are cool enough to handle, cut them into triangles.
How to make cream cheese filling
- Combine cream cheese, sugar, half & half (or whole milk), and vanilla extract in a bowl.
- Use a hand mixer to blend everything together until smooth and well combined.
- Taste the mixture: Is it as sweet as you'd like? Is the texture to your liking?
- If the mixture is too thick, add a little more milk to reach a spreadable consistency.
To assembly
- Spread the cream cheese filling on one side of a waffle. Add sliced strawberries.
- Place the other on top to make a sandwich. And enjoy!
