Choose pink or red fleshed apple varieties to make a tasty apple waffle that looks great too!

Pink Fleshed Apples

When it comes to fruit I love to find the unusual or the unexpected. Many years ago I heard about apples that had a pink or red flesh. I had found a strain of Jonathan apples at a farmer’s market where some of the skin seemed to blend into the fruit but it wasn’t all the way pink or red. Then I was at a store one day looking at heirloom apples and the owner wanted to show me “something cool”. He cut open an apple and it was completely red on the inside. I immediately snapped a photo.

We “collect” red or pink flesh apples whenever we can and wherever we go because I think they look so good in recipes. They often have the perfect tart flavor for cooking and baking.
You know we were going to have to try them out with waffles. Regular apples don’t add any color. But the pink ones, oh man do they make the waffles look cool! I hope you get to try them out yourself!


Pink/Red Flesh Apple Varieties
Here is a list of apples that have a pink or red flesh that I have found and tried myself:
- Pink Pearl
- Hidden Rose / Mountain Rose
- Lucy Glo
- Lucy Rose
- Scarlet Surprise
- Kissabel

The best place to find a pink or red flesh apple is the Lucy Glo apples at Trader Joe’s. They are in season usually starting in November and last until the supply runs out.

Tips
There isn’t a whole lot to make these waffles. I cut the apples into cubes, smaller cubes for mini waffles or large cubes for large waffles. You can go ahead and leave the peels on the apples, it didn’t bother us whatsoever.

š§ How many waffles does it make? Using a Dash Mini Waffle maker I got 8 mini waffles out of this recipe. If you use a large waffle maker, I would expect to get 2 waffles out of this recipe. You can easily double or triple everything to make more waffles..

Pink Flesh Apple Waffles
Ingredients
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tbsp sugar
- 1 cup whole milk or buttermilk
- 4 tbsp salted butterĀ Ā melted
- 1 large egg
- 1 pink flesh apple cored and cubed
- extra butter for greasing the waffle maker
Instructions
- In a large mixing bowl combine: the flour, sugar, baking powder, baking soda, and salt. Mix well.
- Melt the butter in the microwave completely. Let it cool for a few minutes.
- Measure out 1 cup of milk into a measuring cup with space to add 1 cracked egg. Mix well to combine. Once the butter has cooled a bit, add it as well. Stir to combine quickly before the butter hardens.
- Make a well in the center of the dried ingredients and pour in the wet ingredients.
- Mix it all together until it is just combined and there is no dry flour. Don't worry about it being lumpy, the lumps will cook out. You don't want to overmix the batter. Fold in the cubed apple.
- Allow the batter to sit out while the waffle maker heats up. The batter will thicken some as the flour hydrates. I would let the batter sit for about 5 minutes..
- Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter. Cook until waffle can be easily removed without sticking and it appears completely set. Repeat this until you have cooked all the waffles.
