Find out what happens when you put cottage cheese into your waffles!
Cottage cheese is all the rage right now. So of course I had to try to put some into waffles. I wasn’t sure how they were going to turn out but I do say that I was very pleased with the results and would for sure do it again. Any fears of them being too dense were relived once I took that first bite.

Why Add Cottage Cheese?
I have to do things for a good reason. I don’t like to just do something because it’s trendy, although me and my family all love cottage cheese, they can polish off a container in mere moments!
The reason I was looking to add cottage cheese was to first see how it affected the taste and texture of the waffle. Also adding cottage cheese is adding more protein to the waffle. I didn’t take anything out of my normal waffle recipe, just added the cottage cheese to it.

How did the waffles turn out? Fantastic. The waffles had a richer flavor. You wouldn’t think I added cottage cheese to it. It could totally be a secret ingredient you share with people after they ate the waffles.
One thing I didn’t expect is that the edges of the waffles would be more crispy and the texture was better overall.

When I was testing the recipe I did a side by side comparison. I cooked my standard mini waffles right at the same time I did the waffles with the cottage cheese in them. This helps me to be able to directly compare the two and observe the differences I did.

How to Add the Cottage Cheese
You don’t just mix the cottage cheese in straight out of the container. You need to blend it up first. Our camper we don’t have a food processor or big blender, so for this job I relied on our Magic Bullet. I saw these on TVs all the time many years ago and never imagined getting one. But once I figured it was the perfect size for us to have in our camper I was all about it. It’s been a great addition to our camper the last couple years.
The bullet did a good job of making the cottage cheese soft. Since it’s so soft it’s not hard to do really. Once you have the cottage cheese smooth you just mix it into the milk, egg, and butter mixture before adding to the dry ingredients.
💡 Cottage Cheese Buying Tip – Choose one that doesn’t contain too much liquid. Excess liquid could throw off the batter. If it is, you are better of trying to drain off some of the liquid before processing

Cottage Cheese Protein Waffles
Ingredients
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp kosher salt
- 1 tbsp pure cane sugar
- 1 cup whole milk or buttermilk
- 4 tbsp salted butter melted
- 1 large egg
- 1/2 cup cottage cheese small or large curd
- extra butter for greasing the waffle maker
Instructions
- In a large mixing bowl combine: the flour, sugar, baking powder, baking soda, and salt. Mix well.
- Melt the butter in the microwave and allow a few minutes to cool.
- Measure out 1 cup of milk into a measuring cup with space to add 1 cracked egg. Mix well to combine. Once the butter has cooled a bit, add it as well.
- Take your 1/2 cup of cottage cheese and put it through a blender or food processor and process it until it's smooth. Then stir into the milk/egg/butter mixture.
- Make a well in the center of the dried ingredients and pour in the wet ingredients.
- Mix it all together until it is just combined and there is no dry flour. Don't worry about it being lumpy, the lumps will cook out. You don't want to overmix the batter.
- Allow the batter to sit out while the waffle maker heats up. The batter will thicken some as the flour hydrates.
- Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter. Cook until the light goes out. Repeat this until you have cooked all the waffles.
- You can keep waffles warm in an oven set to the lowest temperature. Don't stack the waffles or they could get soggy. You also can re-heat waffles for 30-60 seconds in an air fryer.
