Replace white sugar with brown sugar in these waffles and a recipe for a brown sugar butter syrup is included as well.

There is no doubt we are a maple loving family. We were in heaven when we went to Vermont in September 2021 and saw all the maple syrup options in the store. Just look at this:

But the downside to the real stuff is that it’s not cheap.
We flat out refuse to ever buy any pancake syrup or the like. I would always prefer to make my own (I would love to make my own maple syrup as well but no maple trees for that!).
One easy option is to make syrup that is just brown sugar and butter. Super simple. We make enough for those waffles without making any extra.

Swap in the Brown Sugar
Good news, you can swap in brown sugar for the usual white at a 1 to 1 ratio. I have never had an issue when I did this. And your waffles will benefit from the extra flavor than brown sugar has.
You can pick either light or dark brown sugar. I always will opt for dark because I like it’s deeper flavor that will just make your waffle shine.
While it’s not easy to find you can also use Muscovado sugar. It’s a more natural sugar that is less processed. Brown sugar is made when molasses is added back to white sugar. Muscovado sugar is the sugar before the molasses is removed. If you like dark brown sugar, you are going to fall head over heels in love with Muscovado sugar. The flavor is intense with notes of caramel. It’s way more expensive, so it’s a luxury purchase but worth it every now and again when you locate it. Find it at your more high end or specialty grocery stores.

In case you are wondering just happen to use my waffle stick maker for these waffles and didn’t bother to separate the sticks. I did so because it makes slightly larger waffles than my mini waffle makers.
What if You Have Leftovers?
Since the brown sugar syrup has butter in it, it means that once it cools it certainly going to harden up. You can save it for sure, but you will need to heat it back up enough for it is be pourable again. Leftover waffles can be reheated themselves in the exact waffle iron you made them in or I like to use my air fryer and just cook them for 1 minute.

Brown Sugar Waffles with Brown Sugar Syrup
Ingredients
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 2 tbsp brown sugar
- 2 cups whole milk or buttermilk
- 8 tbsp salted butterĀ melted
- 2 large eggs
- extra butter for greasing the waffle maker
For the brown sugar syrup
- 1/4 cup whole milk
- 8 tbsp butter
- 3/4 cup brown sugar
Instructions
- In a large mixing bowl combine: the flour, 2 tbsp brown sugar, baking powder, baking soda, and salt. Mix well.
- Melt the butter in the microwave and allow a few minutes to cool.
- Measure out 1 cup of milk into a measuring cup with space to add 1 cracked egg. Mix well to combine. Once the butter has cooled a bit, add it as well.
- Make a well in the center of the dried ingredients and pour in the wet ingredients.
- Mix it all together until it is just combined and there is no dry flour. Don't worry about it being lumpy, the lumps will cook out. You don't want to overmix the batter.
- Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter. Cook until brown.
- While the waffles are cooking, put the 1/4 cup of milk. 8 tbsp of butter, and brown sugar in a medium saucepan. Stir to combine. Set over medium high heat. You just need to bring the syrup to a simmer. Once you have done that and the butter is fully melted. Remove from heat. Syrup will slowly start to thicken but should stay pourable for at least 20 minutes or so before the butter hardens too much.
- Finish cook the waffles and serve immediately.
