What Is in the Topping?
Here is what you will need to make the topping to make these into cobbler topped waffles. I have been using this cobbler topping for years for all the apple cobblers I make in the fall.
- 1/2 cup flour
- 1/4 cup brown sugar
- 4 tablespoons butter
You can use this cobbler topping with any waffle recipe. You may need more or less depending on the recipe itself. In our recipe card below I will give you the waffle recipe that we use.

Will It Stick or Burn?
Many years ago I first tried this idea with pancakes and it worked really well. Here is the proof:

I thought I should give it a try in a waffle maker as well. I have never had an issue with it sticking or burning. There is enough fat in it to counteract the sugar that could easily stick and burn. You just need to butter the waffle iron as you normally would and everything will be great.

How to Cook the Waffles
What you do is your get your waffle batter into the waffle maker with your bowl of crumble topping nearby. Then you sprinkle some overtop of the waffle and quickly shut the waffle maker. Add enough to have a thin layer covering the entire waffle as you see in the photo above. The waffles are done when they are golden brown.

Blueberry Cobbler Topped Waffles
Ingredients
For the waffles
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp  baking soda
- 1/2 tsp salt
- 1 tbsp pure cane sugar
- 1 cup buttermilk (or whole milk)
- 4 tbsp salted butter melted
- 1 large egg
- extra butter for greasing the waffle maker
- 1 cup fresh blueberries
For the topping
- 1/2 cup flour
- 1/4 cup brown sugar
- 4 TBS cold butter cut into cubes
Instructions
- To make the cobbler topping, mix together the 1/2 cup of flour and the 1/4 cup of brown sugar. With your finger rub in the cold cubed butter until it is combined with the flour/sugar. Set aside.
- In a large mixing bowl combine: the flour, sugar, baking powder, baking soda, and salt. Mix well to combine.
- Now melt the butter in the microwave or a pot and allow a few minutes to cool.
- Measure out 1 cup of milk into a measuring cup with space so you can add 1 cracked egg. Stir well to combine. Once the butter has cooled a bit, add it as well.
- Make a well in the center of the dried ingredients and pour in the wet ingredients.
- Mix it all together until it is just combined and there is no dry flour. You don't need to work out any lumps. It's important not to overmix the batter.
- Gently fold the fresh blueberries into the waffle batter.
- The batter can sit out while the waffle maker heats up. The batter will thicken some as the flour hydrates.
- Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter.
- Sprinkle enough of the cobbler topping on top to cover the waffle batter with a thin layer and then shut the waffle maker.
- Cook the waffle until they are golden brown and are easy to remove with a spatula that won't scratch the waffle maker.
- You can keep waffles warm in an oven set to the lowest temperature. Don't stack the waffles. they will get soggy.
