Your basic blueberry waffle that is made better with the freshest of blueberries, buttermilk, and some zest fresh from a lemon.
I have to say that no fruit goes better in a waffle than blueberries. They are the perfect size. You don’t need to slice up anything, remove leaves, or pits. You just toss the blueberries in the batter and you end up with this:

Ingredients
For this recipe I use my basic Dash mini waffle recipe that I use any time I use our collection of mini Dash waffle makers.
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp kosher salt
- 1 tbsp pure cane sugar
- 1 cup buttermilk
- 4 tbsp salted butter melted
- 1 large egg
- extra butter for greasing the waffle maker
- 1 cup fresh blueberry
- zest of 1 lemon
The acid in the buttermilk will help the waffle to rise as well as to add a bit of tangy flavor. Use whole milk if you don’t have any buttermilk and you will still be good.

From this recipe all I do is add in some blueberries (1 cup) and the zest of 1 lemon. Easy peasy lemon squeezy! Of course the most freshly picked blueberries are always go to best. So you be sure I am going to make these waffles over and over again during the height of blueberry season. In the US, it starts in April in the southern states. May is a big month as the Georgia kicks into gear as they are one of the top producers. The year wraps up blueberries from the Pacific Northwest.

How to Remove the Lemon Zest
There are some different ways you can remove zest from a lemon. You can do it with a knife or a vegetable peeler but you will end up with some of the white stuff, the bitter pith attached to the zest, plus you will still need to chop the zest up small enough.
🧰 The best tool for the job is a Microplane Zester. Pick out the one with no handle as that was does best for zest. Ones with the handles do a better job with things like hard cheeses.
I have tried some other brands before but not of them worked as one as the one I have had for years from Microplane.
Turn the lemon as you remove the zest from all sides. I do this over a large bowl so I don’t end up with any on the counter instead. I am always amazed at how much flavor that zest can add, it’s incredible.

Blueberry Buttermilk Waffles with Lemon Zest
Ingredients
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tbsp sugar
- 1 cup buttermilk
- 4 tbsp salted butter melted
- 1 large egg
- extra butter for greasing the waffle maker
- 1 cup fresh blueberries
- 1 lemon, zest only
Instructions
- In a large mixing bowl combine: the flour, sugar, baking powder, baking soda, and salt. Mix well to combine.
- Now melt the butter in the microwave or a pot and allow a few minutes to cool.
- Measure out 1 cup of milk into a measuring cup with space so you can add 1 cracked egg along with the lemon zest. Stir well to combine. Once the butter has cooled a bit, add it as well.
- Make a well in the center of the dried ingredients and pour in the wet ingredients.
- Mix it all together until it is just combined and there is no dry flour. You don't need to work out any lumps. It's important not to overmix the batter.
- Gently fold the fresh blueberries into the waffle batter.
- The batter can sit out while the waffle maker heats up. The batter will thicken some as the flour hydrates.
- Once the waffle maker is hot. Brush butter on both top and bottom of the waffle maker then add your batter.
- Cook the waffle until they are golden brown and are easy to remove with a spatula that won't scratch the waffle maker.
- You can keep waffles warm in an oven set to the lowest temperature. Don't stack the waffles. they will get soggy.
- Serve with powdered sugar, butter, and/or real maple syrup.
